Ingredients

  • 1 crisp apple or pear, thinly sliced
  • 1/2 cup candied pecans or walnuts
  • 1/3 cup crumbled feta or goat cheese
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. In a large salad bowl, combine mixed greens, sliced apple or pear, fresh cranberries or pomegranate arils, dried cranberries, and nuts.
  2. Sprinkle cheese evenly over the salad.
  3. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
