Description
Sweet Potato Rounds with Blue Cheese & Cranberries are an elegant yet simple appetizer featuring roasted sweet potato slices topped with creamy blue cheese, tart dried cranberries, and a drizzle of honey.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 oz blue cheese, crumbled
- 1/3 cup dried cranberries
- 2 tbsp honey
- 2 tbsp chopped pecans (optional)
- Fresh thyme leaves for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
- Remove from the oven and top each round with blue cheese while warm so it softens slightly.
- Sprinkle dried cranberries and pecans (if using) over the top.
- Drizzle lightly with honey and garnish with fresh thyme.
- Serve warm or at room temperature.
Notes
- For a milder flavor, substitute goat cheese for blue cheese.
- Make sweet potato rounds ahead and reheat before assembling.
- Add crushed pistachios for extra color and crunch.
