Juicy roasted chicken infused with bright citrusy orange, sweet honey, and savory herbs for a flavorful and aromatic main dish.
Ingredients
- 4 bone-in chicken thighs (or breasts)
- 1/2 cup fresh orange juice
- 1 tbsp orange zest
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 orange, sliced
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
- In a bowl, whisk together orange juice, orange zest, honey, soy sauce, olive oil, garlic, thyme, paprika, salt, and pepper.
- Place the chicken in the baking dish and pour the marinade over it, coating well.
- Arrange orange slices around and on top of the chicken.
- Roast for 35–45 minutes, basting halfway through, until the chicken is cooked through and golden.
- Let rest for 5 minutes before serving. Spoon extra pan sauce over the top.
Notes
- For crispier skin, broil the chicken for the last 2 minutes.
- Add a pinch of red pepper flakes for heat.
- Serve with rice, couscous, or roasted vegetables.
