Description

Juicy roasted chicken infused with bright citrusy orange, sweet honey, and savory herbs for a flavorful and aromatic main dish.


Ingredients

  • 4 bone-in chicken thighs (or breasts)
  • 1/2 cup fresh orange juice
  • 1 tbsp orange zest
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 orange, sliced


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a bowl, whisk together orange juice, orange zest, honey, soy sauce, olive oil, garlic, thyme, paprika, salt, and pepper.
  3. Place the chicken in the baking dish and pour the marinade over it, coating well.
  4. Arrange orange slices around and on top of the chicken.
  5. Roast for 35–45 minutes, basting halfway through, until the chicken is cooked through and golden.
  6. Let rest for 5 minutes before serving. Spoon extra pan sauce over the top.

Notes

  • For crispier skin, broil the chicken for the last 2 minutes.
  • Add a pinch of red pepper flakes for heat.
  • Serve with rice, couscous, or roasted vegetables.
