Description
A hearty and comforting stuffed pepper casserole that captures all the flavors of classic stuffed peppers in an easy, one-pan baked dish with rice, ground meat, peppers, and melted cheese.
Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 bell peppers (red, green, yellow), chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 cup uncooked long-grain rice
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 1/2 cups shredded mozzarella or cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat and cook the ground beef until browned. Drain excess fat.
- Add diced onion and cook for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add chopped bell peppers and cook for another 3–4 minutes.
- Stir in diced tomatoes, tomato paste, uncooked rice, beef broth, salt, pepper, paprika, and Italian seasoning.
- Bring mixture to a gentle simmer, then transfer to a greased casserole dish.
- Cover tightly with foil and bake for 35–40 minutes, until rice is tender.
- Remove foil, sprinkle cheese evenly over the top, and bake uncovered for 10 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
Notes
- You can substitute ground turkey for a lighter version.
- Brown rice may be used but will require extra cooking time and liquid.
- Add red pepper flakes for a spicy kick.
