Description

A hearty and comforting stuffed pepper casserole that captures all the flavors of classic stuffed peppers in an easy, one-pan baked dish with rice, ground meat, peppers, and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 bell peppers (red, green, yellow), chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup uncooked long-grain rice
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 1/2 cups shredded mozzarella or cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat and cook the ground beef until browned. Drain excess fat.
  3. Add diced onion and cook for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds.
  4. Add chopped bell peppers and cook for another 3–4 minutes.
  5. Stir in diced tomatoes, tomato paste, uncooked rice, beef broth, salt, pepper, paprika, and Italian seasoning.
  6. Bring mixture to a gentle simmer, then transfer to a greased casserole dish.
  7. Cover tightly with foil and bake for 35–40 minutes, until rice is tender.
  8. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for 10 minutes until cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving.

Notes

  • You can substitute ground turkey for a lighter version.
  • Brown rice may be used but will require extra cooking time and liquid.
  • Add red pepper flakes for a spicy kick.
