Description

This Spiced Apple Cider Donut Loaf combines the cozy flavors of classic apple cider donuts in a moist, tender loaf cake. Infused with warm spices and coated in cinnamon sugar, it’s a perfect fall treat to enjoy with coffee or tea.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup reduced apple cider (see note)
  • 1/4 cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • For the cinnamon sugar topping: 2 tbsp melted butter + 1/4 cup sugar + 1 tsp cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating after each addition. Mix in vanilla extract.
  5. Stir in reduced apple cider and sour cream until smooth.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the loaf cool for 10 minutes, then remove from pan.
  10. Brush the warm loaf with melted butter and sprinkle evenly with cinnamon sugar mixture.
  11. Slice and serve warm or at room temperature.

Notes

  • To make reduced apple cider: simmer 1 cup of apple cider in a saucepan until reduced to 1/2 cup, about 10–15 minutes.
  • Store leftover loaf wrapped at room temperature for up to 3 days or refrigerate for up to 5 days.
  • You can add small diced apples to the batter for extra texture.
