Description
This Spiced Apple Cider Donut Loaf combines the cozy flavors of classic apple cider donuts in a moist, tender loaf cake. Infused with warm spices and coated in cinnamon sugar, it’s a perfect fall treat to enjoy with coffee or tea.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup reduced apple cider (see note)
- 1/4 cup sour cream or Greek yogurt
- 1 tsp vanilla extract
- For the cinnamon sugar topping: 2 tbsp melted butter + 1/4 cup sugar + 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
- In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, beating after each addition. Mix in vanilla extract.
- Stir in reduced apple cider and sour cream until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
- Let the loaf cool for 10 minutes, then remove from pan.
- Brush the warm loaf with melted butter and sprinkle evenly with cinnamon sugar mixture.
- Slice and serve warm or at room temperature.
Notes
- To make reduced apple cider: simmer 1 cup of apple cider in a saucepan until reduced to 1/2 cup, about 10–15 minutes.
- Store leftover loaf wrapped at room temperature for up to 3 days or refrigerate for up to 5 days.
- You can add small diced apples to the batter for extra texture.
