Description

This Spaghetti Pancake Brunch with Chocolate & Fruit is a fun and creative twist on traditional pancakes. Cooked spaghetti is turned into a crispy, golden pancake topped with melted chocolate, fresh fruit, and a dusting of powdered sugar โ€” perfect for a unique and indulgent brunch treat.

Ingredients

  • 6 oz (170g) cooked spaghetti
  • 2 large eggs
  • 1/4 cup milk
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp butter (for frying)
  • 1/4 cup melted chocolate or chocolate spread
  • 1/2 cup fresh berries (strawberries, blueberries, raspberries)
  • 1 small banana, sliced
  • Powdered sugar, for dusting
  • Maple syrup (optional, for serving)

Instructions

  1. In a large bowl, whisk together the eggs, milk, sugar, and vanilla extract.
  2. Add the cooked spaghetti to the mixture and toss until all noodles are well coated.
  3. Heat the butter in a large non-stick skillet over medium heat.
  4. Pour the spaghetti mixture into the skillet, spreading it evenly to form a pancake shape.
  5. Cook for 4-5 minutes on one side until golden and crisp, then carefully flip and cook the other side for another 3-4 minutes.
  6. Transfer the pancake to a serving plate and drizzle with melted chocolate.
  7. Top with fresh berries, banana slices, and a dusting of powdered sugar.
  8. Serve warm with optional maple syrup on the side.

Notes

  • Use leftover spaghetti for a quick and waste-free brunch idea.
  • Substitute dark chocolate for milk chocolate if you prefer a richer flavor.
  • You can add a pinch of cinnamon or nutmeg to the batter for extra warmth.
