Ingredients

  • For the Pancakes:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda

  • 2 large eggs
  • 3/4 cup buttermilk (plus more if needed)

  • For the Chilli Butter:
  • 1/4 cup unsalted butter, softened
  • 1 tsp chilli flakes (adjust to taste)
  • 1 small garlic clove, minced
  • 1/2 tsp lemon juice
  • Pinch of salt
  • 1 tbsp chopped cilantro or parsley (for garnish)


Instructions

  1. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, pepper, and smoked paprika.
  2. In a separate bowl, whisk eggs, buttermilk, and melted butter until smooth.
  3. Pour wet ingredients into dry ingredients and stir gently until just combined (don’t overmix). Fold in cheese, herbs, and optional vegetables.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup batter per pancake and cook for 2–3 minutes until bubbles form on the surface. Flip and cook another 1–2 minutes until golden and cooked through. Keep warm in a low oven while cooking the rest.
  6. In a small bowl, mix softened butter with chilli flakes, garlic, lemon juice, and a pinch of salt until well combined. Chill briefly to firm up if desired.
