Ingredients
- 1 sheet puff pastry (thawed)
- 1 tbsp olive oil
- 1 tbsp butter
- 8 oz mushrooms, sliced (cremini or button)
- 2 cloves garlic, minced
- 1 cup pumpkin purée
- 1/4 cup heavy cream (or half-and-half)
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp ground nutmeg
- 1 tbsp fresh sage, chopped (or 1 tsp dried sage)
- 1 egg, beaten (for egg wash)
- 1/4 cup crumbled goat cheese or feta (optional, for topping)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil and butter over medium heat. Add sliced mushrooms and sauté for 5–6 minutes until golden and tender. Stir in garlic and cook for 1 more minute. Set aside.
- In a bowl, mix pumpkin purée, heavy cream, Parmesan, salt, pepper, nutmeg, and sage until smooth and creamy.
- On a lightly floured surface, roll out the puff pastry slightly to smooth edges, then place it on the prepared baking sheet.
- Spread the pumpkin mixture evenly over the pastry, leaving a 1-inch border around the edges.
- Top with sautéed mushrooms and sprinkle with crumbled goat cheese or feta, if desired.
- Fold the edges of the pastry slightly inward to create a rustic border. Brush edges with beaten egg for shine.
- Bake for 25–30 minutes, or until the crust is golden brown and puffed.
- Let cool for 5 minutes before slicing. Garnish with extra sage or a drizzle of olive oil before serving.
