Ingredients
- 1 (9-inch) pie crust, homemade or store-bought
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup honey
- 1 cup granulated sugar
- 1/4 cup cornmeal
- 1/4 tsp salt
- 3 large eggs
- 1/2 cup heavy cream
- 2 tsp white vinegar or lemon juice
- 1 tsp vanilla extract
- Flaky sea salt, for garnish
Instructions
- Preheat oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish, trim edges, and crimp as desired. Chill the crust for 10 minutes.
- In a large bowl, whisk together melted butter, honey, sugar, cornmeal, and salt until smooth.
- Add the eggs one at a time, whisking well after each addition.
- Whisk in heavy cream, vinegar (or lemon juice), and vanilla until fully combined and smooth.
- Pour the filling into the prepared pie crust.
- Bake for 45–50 minutes, or until the edges are set but the center still jiggles slightly.
- Allow the pie to cool completely to room temperature, then refrigerate for at least 2 hours to set.
- Before serving, sprinkle lightly with flaky sea salt.
- Slice and serve chilled or at room temperature.
Notes
- Use high-quality honey for the best flavor — wildflower or clover honey work beautifully.
- To prevent over-browning, cover the crust edges with foil during the last 15 minutes of baking.
- Pairs perfectly with a dollop of whipped cream or vanilla ice cream.
