A fun and quick breakfast or snack that combines the flavors of pizza with scrambled or baked eggs, topped with cheese and favorite pizza toppings.
Ingredients
- 4 large eggs
- 2 tablespoons milk
- 1/4 cup pizza sauce
- 1/2 cup shredded mozzarella cheese
- 8 slices pepperoni (or other toppings like mushrooms, peppers, or olives)
- 1/4 teaspoon Italian seasoning
- 1 tablespoon olive oil or butter
- Salt and pepper, to taste
Instructions
- In a bowl, whisk eggs with milk, salt, and pepper.
- Heat olive oil or butter in a skillet over medium heat.
- Pour in egg mixture and cook, stirring gently, until partially set.
- Spread pizza sauce over the eggs and sprinkle with Italian seasoning.
- Top with mozzarella cheese and pepperoni (or other toppings of choice).
- Cover skillet and cook for another 2-3 minutes, until cheese is melted and eggs are fully cooked.
- Serve hot, optionally garnished with fresh basil.
Notes
- For a baked version, pour eggs into an oven-safe skillet, add toppings, and bake at 375°F (190°C) for 10-12 minutes.
- Customize with your favorite pizza toppings such as ham, onions, bell peppers, or jalapeños.
