Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 8 slices pepperoni (or other toppings like mushrooms, peppers, or olives)
  • 1/4 teaspoon Italian seasoning
  • 1 tablespoon olive oil or butter
  • Salt and pepper, to taste


Instructions

  1. In a bowl, whisk eggs with milk, salt, and pepper.
  2. Heat olive oil or butter in a skillet over medium heat.
  3. Pour in egg mixture and cook, stirring gently, until partially set.
  4. Spread pizza sauce over the eggs and sprinkle with Italian seasoning.
  5. Top with mozzarella cheese and pepperoni (or other toppings of choice).
  6. Cover skillet and cook for another 2-3 minutes, until cheese is melted and eggs are fully cooked.
  7. Serve hot, optionally garnished with fresh basil.
