Ingredients
- 1 box (3.4 oz) instant pistachio pudding mix
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup vegetable oil
- 3 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped pistachios (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together the pudding mix, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat together the oil, eggs, milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the chopped pistachios, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra moisture, do not overmix the batter.
- You can add a simple glaze made with powdered sugar and milk for sweetness.
