Ingredients

  • 1 box (3.4 oz) instant pistachio pudding mix
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pistachios (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the pudding mix, flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat together the oil, eggs, milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the chopped pistachios, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
