Description
Pistachio Chocolate Lava Cakes are rich individual desserts featuring a tender chocolate exterior with a warm, flowing pistachio center for an indulgent and elegant treat.
Ingredients
- 150 g dark chocolate, chopped
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 2 large eggs
- 2 egg yolks
- 1 tsp vanilla extract
- 1/3 cup all-purpose flour
- 1/4 tsp salt
- 1/3 cup pistachio cream or pistachio spread
- 2 tbsp finely chopped pistachios (optional)
Instructions
- Preheat oven to 200°C (400°F) and grease 4 ramekins.
- Melt dark chocolate and butter together until smooth, then let cool slightly.
- Whisk in sugar until combined.
- Add eggs and egg yolks, beating until smooth and glossy.
- Stir in vanilla extract.
- Fold in flour and salt gently until just combined.
- Fill each ramekin halfway with batter, add a spoonful of pistachio cream in the center, then cover with remaining batter.
- Bake for 11–13 minutes until edges are set but centers remain soft.
- Rest for 2 minutes, then carefully invert onto serving plates.
- Garnish with chopped pistachios and serve immediately.
Notes
- Do not overbake to maintain the molten center.
- Freeze pistachio cream portions beforehand for an even gooier filling.
- Serve with vanilla ice cream or whipped cream.
