Description

Pistachio Chocolate Lava Cakes are rich individual desserts featuring a tender chocolate exterior with a warm, flowing pistachio center for an indulgent and elegant treat.


Ingredients

  • 150 g dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 1/3 cup pistachio cream or pistachio spread
  • 2 tbsp finely chopped pistachios (optional)


Instructions

  1. Preheat oven to 200°C (400°F) and grease 4 ramekins.
  2. Melt dark chocolate and butter together until smooth, then let cool slightly.
  3. Whisk in sugar until combined.
  4. Add eggs and egg yolks, beating until smooth and glossy.
  5. Stir in vanilla extract.
  6. Fold in flour and salt gently until just combined.
  7. Fill each ramekin halfway with batter, add a spoonful of pistachio cream in the center, then cover with remaining batter.
  8. Bake for 11–13 minutes until edges are set but centers remain soft.
  9. Rest for 2 minutes, then carefully invert onto serving plates.
  10. Garnish with chopped pistachios and serve immediately.

Notes

  • Do not overbake to maintain the molten center.
  • Freeze pistachio cream portions beforehand for an even gooier filling.
  • Serve with vanilla ice cream or whipped cream.
