Description
Crispy on the outside and tender inside, oat-crusted fried herring is a wholesome twist on a classic fish dish, using oats for a crunchy coating and rich flavor.
Ingredients
- 4 fresh herring fillets, cleaned and deboned
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 large eggs
- 2 tablespoons milk
- Vegetable oil, for frying
- Lemon wedges, for serving
Instructions
- Rinse the herring fillets and pat them dry with paper towels.
- In a food processor, pulse the rolled oats until coarse crumbs form.
- In a shallow bowl, mix the oats with flour, salt, pepper, paprika, and garlic powder.
- In another bowl, whisk together the eggs and milk.
- Dip each herring fillet into the egg mixture, then coat evenly with the oat mixture.
- Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
- Fry the coated herring fillets for 3–4 minutes per side, or until golden brown and cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with lemon wedges.
Notes
- Do not overcrowd the pan to maintain oil temperature.
- Rolled oats provide a heartier crunch than breadcrumbs.
- Serve with a simple salad or boiled potatoes for a complete meal.
