Description

Crispy on the outside and tender inside, oat-crusted fried herring is a wholesome twist on a classic fish dish, using oats for a crunchy coating and rich flavor.


Ingredients

  • 4 fresh herring fillets, cleaned and deboned
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 large eggs
  • 2 tablespoons milk
  • Vegetable oil, for frying
  • Lemon wedges, for serving


Instructions

  1. Rinse the herring fillets and pat them dry with paper towels.
  2. In a food processor, pulse the rolled oats until coarse crumbs form.
  3. In a shallow bowl, mix the oats with flour, salt, pepper, paprika, and garlic powder.
  4. In another bowl, whisk together the eggs and milk.
  5. Dip each herring fillet into the egg mixture, then coat evenly with the oat mixture.
  6. Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
  7. Fry the coated herring fillets for 3–4 minutes per side, or until golden brown and cooked through.
  8. Transfer to a paper towel-lined plate to drain excess oil.
  9. Serve hot with lemon wedges.

  • Do not overcrowd the pan to maintain oil temperature.
  • Rolled oats provide a heartier crunch than breadcrumbs.
