Ingredients
- 4 large eggs
- 1 tbsp olive oil
- 1/2 cup diced tomatoes
- 1/4 cup diced onion
- 1 jalapeño, seeded and diced
- 1 garlic clove, minced
- 1/4 tsp cumin
- 1/4 tsp chili powder
- Salt and pepper, to taste
- 2 tbsp chopped cilantro
- Optional: queso fresco, avocado slices, tortillas
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion, jalapeño, and garlic; sauté until softened.
- Stir in tomatoes, cumin, chili powder, salt, and pepper. Cook for 2–3 minutes.
- Crack the eggs directly into the skillet.
- Cover and cook until eggs are done to your liking, or gently scramble them into the mixture.
- Top with cilantro and serve with queso fresco, avocado, or warm tortillas.
Notes
- Add chorizo for a heartier version.
- Use serrano peppers for extra heat.
- Great served over rice or refried beans.
