Ingredients

  • 4 large eggs
  • 1 tbsp olive oil
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 1 jalapeño, seeded and diced
  • 1 garlic clove, minced
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • Salt and pepper, to taste
  • 2 tbsp chopped cilantro
  • Optional: queso fresco, avocado slices, tortillas


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion, jalapeño, and garlic; sauté until softened.
  3. Stir in tomatoes, cumin, chili powder, salt, and pepper. Cook for 2–3 minutes.
  4. Crack the eggs directly into the skillet.
  5. Cover and cook until eggs are done to your liking, or gently scramble them into the mixture.
  6. Top with cilantro and serve with queso fresco, avocado, or warm tortillas.

Notes

  • Add chorizo for a heartier version.
  • Use serrano peppers for extra heat.
