Ingredients
- 1 lb boneless, skinless chicken breasts (or thighs)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 4 pita breads or flatbreads
- 1 cup chopped lettuce
- 1 medium tomato, diced
- 1/2 cucumber, sliced or diced
- 1/4 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1 cup tzatziki sauce
- Fresh parsley or dill, for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Heat a grill or skillet over medium-high heat. Cook chicken for 5–6 minutes per side, until golden and fully cooked through (internal temperature 165°F / 74°C).
- Remove chicken from heat and let rest for 5 minutes, then slice into thin strips.
- Warm pita breads on the grill or in a dry skillet until soft and pliable.
- Assemble gyros by spreading tzatziki sauce over each pita, then layering sliced chicken, lettuce, tomato, cucumber, red onion, and feta.
- Garnish with fresh herbs and a drizzle of extra tzatziki or olive oil, if desired. Fold and serve immediately.
