Description

A light and flavorful Mediterranean baked fish dish featuring tender white fish baked with olive oil, tomatoes, herbs, and lemon for a healthy and aromatic meal.


Ingredients

  • 4 white fish fillets (such as cod, haddock, or tilapia)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 lemon, sliced
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Place the fish fillets in the baking dish in a single layer.
  4. In a small bowl, mix olive oil, garlic, oregano, paprika, salt, and black pepper.
  5. Pour the olive oil mixture evenly over the fish.
  6. Scatter cherry tomatoes and sliced red onion around and over the fish.
  7. Top with lemon slices.
  8. Bake for 18–22 minutes, or until the fish flakes easily with a fork.
  9. Remove from the oven, garnish with fresh parsley, and serve warm.
