Matcha Banana Coconut Muffins are moist, naturally sweet muffins made with ripe bananas, earthy matcha green tea, and coconut for a healthy, flavorful treat perfect for breakfast or snacks.
Ingredients
- 2 ripe bananas, mashed
- 2 large eggs
- 1/3 cup coconut oil, melted
- 1/3 cup coconut sugar or brown sugar
- 1/4 cup milk or coconut milk
- 1 3/4 cups all-purpose flour
- 1 tbsp matcha green tea powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup shredded coconut (unsweetened)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mix mashed bananas, eggs, coconut oil, sugar, milk, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, matcha powder, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Fold in shredded coconut.
- Divide batter evenly among muffin cups.
- Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Allow muffins to cool for 5 minutes before transferring to a wire rack.
Notes
- Use ripe bananas for maximum sweetness.
- Do not overmix to keep muffins tender.
- Store in an airtight container for up to 3 days.
