A rich and comforting loaded potato soup made with tender potatoes, creamy broth, crispy bacon, and melty cheese—perfect for a cozy meal.


Ingredients

  • 6 medium russet potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Chopped green onions, for garnish


Instructions

  1. In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add butter to the pot, then sauté onion until soft. Add garlic and cook for 30 seconds.
  3. Stir in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in chicken broth until smooth.
  5. Add diced potatoes, salt, pepper, and paprika. Bring to a boil.
  6. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  7. Stir in heavy cream, sour cream, and cheddar cheese until melted and creamy.
  8. Use a potato masher to slightly mash the soup for desired thickness.
  9. Top with crispy bacon and green onions before serving.

Notes

  • For a thicker soup, mash more potatoes.
  • Use milk instead of cream for a lighter version.
