A rich and comforting loaded potato soup made with tender potatoes, creamy broth, crispy bacon, and melty cheese—perfect for a cozy meal.
Ingredients
- 6 medium russet potatoes, peeled and diced
- 4 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Chopped green onions, for garnish
Instructions
- In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
- Add butter to the pot, then sauté onion until soft. Add garlic and cook for 30 seconds.
- Stir in flour and cook for 1 minute to form a roux.
- Gradually whisk in chicken broth until smooth.
- Add diced potatoes, salt, pepper, and paprika. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Stir in heavy cream, sour cream, and cheddar cheese until melted and creamy.
- Use a potato masher to slightly mash the soup for desired thickness.
- Top with crispy bacon and green onions before serving.
Notes
- For a thicker soup, mash more potatoes.
- Use milk instead of cream for a lighter version.
