Description

Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 4 ripe bananas, sliced
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 tbsp lemon juice


Instructions

  1. Preheat oven to 350°F (175°C). Pour melted butter into the bottom of a 9×13-inch baking dish.
  2. In a mixing bowl, whisk together flour, granulated sugar, baking powder, salt, milk, and vanilla extract until smooth.
  3. In a separate pan over medium heat, combine sliced bananas, brown sugar, cinnamon, nutmeg, and lemon juice. Stir gently until the bananas are coated and caramelized, about 3–4 minutes.
  4. Pour the batter evenly over the melted butter in the baking dish — do not stir.
  5. Spoon the banana mixture evenly over the top of the batter — again, do not mix. The batter will rise around the fruit as it bakes.
  6. Bake for 40–45 minutes, or until the top is golden brown and crisp around the edges.
  7. Let cool slightly before serving warm with vanilla ice cream or whipped cream.

Notes

  • For extra richness, add a splash of rum or banana liqueur to the banana mixture.
  • Use very ripe bananas for the sweetest flavor.
