Ingredients

  • 1 cup granulated sugar
  • 2 tbsp water
  • 1 cup raw hazelnuts or almonds
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and toast nuts for 8–10 minutes until fragrant.
  2. In a saucepan over medium heat, combine sugar and water without stirring.
  3. Allow sugar to melt and turn into a deep amber caramel.
  4. Remove from heat and quickly stir in toasted nuts and salt.
  5. Pour mixture onto a parchment-lined tray and let cool completely until hardened.
  6. Break into pieces and transfer to a food processor.
  7. Blend until a smooth, creamy paste forms, scraping down sides as needed.
  8. Add vanilla extract if desired and blend briefly to combine.
  9. Store in an airtight jar at room temperature.

Notes
