Ingredients

  • 1 lb sirloin or ribeye steak
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 cups cooked rice (white or brown)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup corn kernels
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley or cilantro


Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Rub the steak with olive oil, salt, pepper, smoked paprika, and garlic powder.
  3. Grill the steak for 4–5 minutes per side, or until desired doneness.
  4. Remove steak from the grill and let it rest for 5 minutes before slicing against the grain.
  5. In a small bowl, whisk together sour cream, mayonnaise, lemon juice, and chopped herbs to make the creamy sauce.
  6. Assemble bowls by adding rice as the base.
  7. Top rice with sliced steak, tomatoes, cucumber, corn, and red onion.
  8. Drizzle with creamy sauce and serve immediately.
