Ingredients
- 1 lb sirloin or ribeye steak
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 2 cups cooked rice (white or brown)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup corn kernels
- 1/4 cup red onion, thinly sliced
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley or cilantro
Instructions
- Preheat a grill or grill pan to medium-high heat.
- Rub the steak with olive oil, salt, pepper, smoked paprika, and garlic powder.
- Grill the steak for 4–5 minutes per side, or until desired doneness.
- Remove steak from the grill and let it rest for 5 minutes before slicing against the grain.
- In a small bowl, whisk together sour cream, mayonnaise, lemon juice, and chopped herbs to make the creamy sauce.
- Assemble bowls by adding rice as the base.
- Top rice with sliced steak, tomatoes, cucumber, corn, and red onion.
- Drizzle with creamy sauce and serve immediately.
