Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (for sauce)
  • 1 tablespoon grated Parmesan cheese (optional)


Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Season chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
  3. Grill chicken for 5-6 minutes per side, until fully cooked and juices run clear.
  4. Toss broccoli florets with a drizzle of olive oil, salt, and pepper, then grill or steam until tender.
