Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup cooked brown rice or quinoa
- 1/2 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil (for sauce)
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
- Preheat grill or grill pan over medium-high heat.
- Season chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
- Grill chicken for 5-6 minutes per side, until fully cooked and juices run clear.
- Toss broccoli florets with a drizzle of olive oil, salt, and pepper, then grill or steam until tender.
- In a small bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, and Parmesan (if using) to make the creamy garlic sauce.
- Slice grilled chicken and assemble bowls with rice or quinoa, broccoli, and chicken.
- Drizzle with creamy garlic sauce before serving.

- You can substitute rice with cauliflower rice for a lower-carb option.
