Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 1 1/4 cups milk
  • 1/4 cup molasses
  • 2 tbsp brown sugar
  • 2 tbsp melted butter (plus more for cooking)
  • 1 tsp vanilla extract


Instructions

  1. In a large bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking powder, baking soda, and salt.
  2. In another bowl, whisk the egg, milk, molasses, brown sugar, melted butter, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
  4. Heat a lightly buttered skillet or griddle over medium heat.
  5. Pour 1/4 cup batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup, whipped cream, or fresh fruit.

Notes

  • For fluffier pancakes, let the batter rest for 5 minutes before cooking.
