A comforting, savory French Onion Beef Rice Casserole made with ground beef, caramelized onions, rice, and creamy soup, baked to golden perfection for a hearty family dinner.
Ingredients
- 1 lb ground beef
- 1 cup long-grain white rice, uncooked
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can French onion soup
- 1 cup beef broth
- 1 cup shredded mozzarella or Swiss cheese
- 2 tbsp butter
- 1 small onion, finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until golden and soft, about 5–7 minutes.
- Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
- Stir in garlic powder, salt, and pepper.
- In a large mixing bowl, combine uncooked rice, cream of mushroom soup, French onion soup, and beef broth. Mix well.
- Add the cooked beef and onions to the mixture and stir to combine.
- Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
- Dot the top with butter and cover tightly with foil.
- Bake for 60 minutes, or until rice is tender and liquid is absorbed.
- Remove the foil, sprinkle shredded cheese over the top, and bake uncovered for another 10 minutes until cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
Notes
- You can substitute ground turkey or chicken for a lighter option.
- Add sautéed mushrooms or green beans for extra vegetables.
- For a richer flavor, use caramelized onions instead of regular sautéed onions.
