Description

A comforting, savory French Onion Beef Rice Casserole made with ground beef, caramelized onions, rice, and creamy soup, baked to golden perfection for a hearty family dinner.


Ingredients

  • 1 lb ground beef
  • 1 cup long-grain white rice, uncooked
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can French onion soup
  • 1 cup beef broth
  • 1 cup shredded mozzarella or Swiss cheese
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until golden and soft, about 5–7 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  4. Stir in garlic powder, salt, and pepper.
  5. In a large mixing bowl, combine uncooked rice, cream of mushroom soup, French onion soup, and beef broth. Mix well.
  6. Add the cooked beef and onions to the mixture and stir to combine.
  7. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  8. Dot the top with butter and cover tightly with foil.
  9. Bake for 60 minutes, or until rice is tender and liquid is absorbed.
  10. Remove the foil, sprinkle shredded cheese over the top, and bake uncovered for another 10 minutes until cheese is melted and bubbly.
  11. Garnish with chopped parsley before serving.
