Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/3 cup hot cocoa mix
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional)
  • Whipped cream for topping (optional)


Instructions

  1. Preheat oven to 170°C (325°F) and grease a 9-inch springform pan.
  2. Mix chocolate cookie crumbs with melted butter and press firmly into the bottom of the pan.
  3. Bake the crust for 10 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese until smooth.
  5. Add sugar and mix until combined.
  6. Add eggs one at a time, mixing on low speed.
  7. Mix in sour cream, hot cocoa mix, and vanilla extract until smooth.
  8. Fold in chocolate chips if using.
  9. Pour filling over the crust and smooth the top.
  10. Bake for 45–50 minutes until the center is just set.
  11. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
  12. Refrigerate for at least 4 hours before serving.
