Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/3 cup hot cocoa mix
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips (optional)
- Whipped cream for topping (optional)
Instructions
- Preheat oven to 170°C (325°F) and grease a 9-inch springform pan.
- Mix chocolate cookie crumbs with melted butter and press firmly into the bottom of the pan.
- Bake the crust for 10 minutes, then let cool slightly.
- In a large bowl, beat cream cheese until smooth.
- Add sugar and mix until combined.
- Add eggs one at a time, mixing on low speed.
- Mix in sour cream, hot cocoa mix, and vanilla extract until smooth.
- Fold in chocolate chips if using.
- Pour filling over the crust and smooth the top.
- Bake for 45–50 minutes until the center is just set.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours before serving.
Notes
- Do not overmix to avoid cracks.
- Serve with whipped cream or marshmallows for a hot cocoa feel.
- Best chilled overnight for full flavor.
