Description
Tender, slow-roasted pork infused with warm spices and sweet apple cider for a comforting, flavorful meal.
Ingredients
- 3–4 lb pork loin roast
- 2 cups apple cider
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 apples, sliced
- 1 tbsp Dijon mustard
- 1 tbsp brown sugar
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Season the pork roast with salt, pepper, thyme, rosemary, and cinnamon.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Sear the pork on all sides until golden brown.
- Add sliced onions, garlic, and apples around the pork.
- Whisk together apple cider, chicken broth, Dijon mustard, and brown sugar, then pour over the roast.
- Cover the pot and roast for 1.5–2 hours, or until the pork reaches 145°F internally.
- Let the pork rest for 10 minutes before slicing. Serve with the apple-onion pan sauce.
Notes
- For a thicker sauce, simmer the liquid on the stovetop after cooking.
- Use apple juice if cider is unavailable.
- Add carrots or potatoes to make it a full one-pot meal.
