Description

Tender, slow-roasted pork infused with warm spices and sweet apple cider for a comforting, flavorful meal.


Ingredients

  • 34 lb pork loin roast
  • 2 cups apple cider
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 apples, sliced
  • 1 tbsp Dijon mustard
  • 1 tbsp brown sugar
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the pork roast with salt, pepper, thyme, rosemary, and cinnamon.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Sear the pork on all sides until golden brown.
  5. Add sliced onions, garlic, and apples around the pork.
  6. Whisk together apple cider, chicken broth, Dijon mustard, and brown sugar, then pour over the roast.
  7. Cover the pot and roast for 1.5–2 hours, or until the pork reaches 145°F internally.
  8. Let the pork rest for 10 minutes before slicing. Serve with the apple-onion pan sauce.

Notes

  • For a thicker sauce, simmer the liquid on the stovetop after cooking.
  • Use apple juice if cider is unavailable.
  • Add carrots or potatoes to make it a full one-pot meal.
