Ingredients

  • 2 ribeye steaks (about 10 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme or rosemary, chopped
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Pat ribeye steaks dry and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear ribeye steaks for 3-4 minutes per side, or until desired doneness. Remove and rest under foil.
  4. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in heavy cream and stir, scraping any browned bits from the pan.
  6. Whisk in Parmesan cheese and herbs, simmering until the sauce thickens, about 3-5 minutes.
  7. Return steaks briefly to the pan to coat with sauce or serve steaks topped with sauce.
  8. Garnish with fresh parsley and serve immediately.
