Ingredients
- 1 large yellow onion, cut into 1/2-inch rings
- 2 large eggs
- 2 tbsp heavy cream
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Avocado oil or olive oil, for frying
- Optional: sugar-free ketchup or spicy aioli for dipping
Instructions
- Separate the onion into individual rings and set aside.
- In a small bowl, whisk together eggs and heavy cream.
- In another bowl, combine almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each onion ring into the egg mixture, then coat with the almond flour mixture. Press lightly to help the coating stick.
- Place coated rings on a parchment-lined baking sheet and let rest for 5–10 minutes to set the coating.
- Heat 1–2 inches of oil in a deep skillet or pot over medium-high heat (about 350°F / 175°C).
- Fry onion rings in batches for 2–3 minutes per side until golden brown and crispy. Do not overcrowd the pan.
- Remove and drain on paper towels. Sprinkle with a little extra salt if desired.
- Serve warm with your favorite keto-friendly dipping sauce.
Notes
- To air fry: Cook at 375°F (190°C) for 10–12 minutes, flipping halfway through.
- For extra crunch, double-dip: repeat the egg wash and coating process once more.
- These onion rings are best served immediately but can be reheated in the air fryer or oven to re-crisp.
- Use finely grated Parmesan for the crispiest coating.
