Ingredients
- 1 lb flank steak or sirloin (cut into thin strips)
- 2 cups cooked white rice
- 1 cup queso dip (store-bought or homemade)
- 1/2 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Cook rice according to package instructions and keep warm.
- In a small saucepan, warm queso dip and stir in shredded cheddar cheese until smooth and creamy. Set aside.
- Season steak strips with chili powder, smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add steak strips and cook for 3–5 minutes, until browned and cooked to desired doneness. Remove from heat.
- Stir queso mixture into the cooked rice until fully combined.
- Serve steak strips over the creamy queso rice.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
- For extra spice, add jalapeños or a splash of hot sauce to the queso.
- Use brown rice or cauliflower rice for a lighter option.
