This Creamy Parmesan Italian Sausage Ditalini Soup is a rich and hearty comfort food favorite made with savory Italian sausage, tender ditalini pasta, and a creamy Parmesan-infused broth. It’s the perfect cozy bowl for chilly nights — filling, flavorful, and easy to make in one pot.
Ingredients
- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 1/2 cups water
- 1 cup ditalini pasta (or any small pasta)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 2 cups fresh spinach, chopped (optional)
- 1 tbsp fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add sausage and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.
- Add onion, garlic, carrots, and celery. Sauté for 4–5 minutes until the vegetables begin to soften.
- Pour in chicken broth and water. Bring to a boil.
- Add the ditalini pasta and cook for 8–10 minutes, stirring occasionally, until the pasta is al dente.
- Reduce heat to low. Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and black pepper. Mix until the cheese melts and the soup becomes creamy.
- If using, stir in chopped spinach and cook for 1–2 more minutes until wilted.
- Taste and adjust seasoning as desired.
- Serve hot, garnished with fresh parsley and extra Parmesan.
Notes
- For a lighter version, substitute half-and-half or evaporated milk for the heavy cream.
- Add a pinch of red pepper flakes for heat.
- Leftovers thicken as they sit — just add a splash of broth or cream when reheating.
