Description

This Creamy Parmesan Italian Sausage Ditalini Soup is a rich and hearty comfort food favorite made with savory Italian sausage, tender ditalini pasta, and a creamy Parmesan-infused broth. It’s the perfect cozy bowl for chilly nights — filling, flavorful, and easy to make in one pot.


Ingredients

  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 1/2 cups water
  • 1 cup ditalini pasta (or any small pasta)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 cups fresh spinach, chopped (optional)
  • 1 tbsp fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add sausage and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.
  2. Add onion, garlic, carrots, and celery. Sauté for 4–5 minutes until the vegetables begin to soften.
  3. Pour in chicken broth and water. Bring to a boil.
  4. Add the ditalini pasta and cook for 8–10 minutes, stirring occasionally, until the pasta is al dente.
  5. Reduce heat to low. Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and black pepper. Mix until the cheese melts and the soup becomes creamy.
  6. If using, stir in chopped spinach and cook for 1–2 more minutes until wilted.
  7. Taste and adjust seasoning as desired.
  8. Serve hot, garnished with fresh parsley and extra Parmesan.

Notes

  • For a lighter version, substitute half-and-half or evaporated milk for the heavy cream.
  • Add a pinch of red pepper flakes for heat.
  • Leftovers thicken as they sit — just add a splash of broth or cream when reheating.
