Ingredients

  • 1 lb potato gnocchi
  • 1 lb Italian sausage, casings removed
  • 2 cups butternut squash, cubed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • Fresh sage or parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add the butternut squash and chicken broth. Simmer until squash is tender, about 10–12 minutes.
  4. Stir in the heavy cream, Parmesan cheese, salt, pepper, and nutmeg. Simmer until slightly thickened.
  5. Cook gnocchi according to package instructions, then drain.
  6. Add gnocchi to the sauce and toss to coat.
  7. Garnish with fresh sage or parsley and serve warm.
