Ingredients
- 1 lb potato gnocchi
- 1 lb Italian sausage, casings removed
- 2 cups butternut squash, cubed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- Fresh sage or parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks.
- Add garlic and cook for 1 minute until fragrant.
- Add the butternut squash and chicken broth. Simmer until squash is tender, about 10–12 minutes.
- Stir in the heavy cream, Parmesan cheese, salt, pepper, and nutmeg. Simmer until slightly thickened.
- Cook gnocchi according to package instructions, then drain.
- Add gnocchi to the sauce and toss to coat.
- Garnish with fresh sage or parsley and serve warm.
