Description

Creamy Butter Chicken is a classic Indian-inspired dish featuring tender chicken simmered in a rich, buttery tomato cream sauce infused with warm spices and a hint of sweetness.


Ingredients

  • 1 lb (450 g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1/4 cup plain yogurt
  • 1 teaspoon garam masala
  • 1 teaspoon paprika or Kashmiri chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt to taste
  • 1 teaspoon sugar or honey (optional)
  • 2 tablespoons chopped fresh cilantro


Instructions

  1. Heat oil and 1 tablespoon butter in a large skillet over medium heat.
  2. Add chopped onion and sauté until soft and lightly golden.
  3. Stir in garlic and ginger and cook for 30 seconds until fragrant.
  4. Add tomato puree, garam masala, paprika, cumin, coriander, salt, and sugar if using.
  5. Simmer the sauce for 8–10 minutes until thickened and glossy.
  6. Add chicken pieces and cook for 8–10 minutes until fully cooked.
  7. Reduce heat to low and stir in yogurt, followed by heavy cream.
  8. Add remaining butter and gently simmer for 3–5 minutes.
  9. Garnish with fresh cilantro and serve hot.

Notes

  • Serve with basmati rice or naan bread.
  • Do not boil after adding cream to prevent curdling.
  • Chicken thighs provide extra tenderness and flavor.
