Ingredients
- 1 cup rolled oats
- 1 cup boiling water
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/3 cup honey
- 1/4 cup vegetable oil or melted butter
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and grease a standard loaf pan.
- Pour boiling water over the oats and let sit for 10 minutes until softened.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix honey, oil, egg, milk, and vanilla extract.
- Add the soaked oats to the wet ingredients and stir well.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep the bread tender.
- Optional: add chopped nuts or raisins for extra texture.
- Store in an airtight container at room temperature for up to 3 days.
