Ingredients
- 2 ribeye or sirloin steaks (about 1 inch thick)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- For the Cowboy Butter:
- 1/2 cup unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp Worcestershire sauce
Instructions
- Pat steaks dry with paper towels and season both sides with salt, pepper, and smoked paprika.
- Heat a large cast-iron skillet over medium-high heat and add olive oil.
- Once hot, sear steaks for 3–4 minutes per side (for medium-rare) or until desired doneness. Transfer to a plate and let rest for 5 minutes.
- While the steaks rest, prepare the cowboy butter. In a small saucepan or bowl, combine melted butter, garlic, Dijon mustard, lemon juice, parsley, chives, crushed red pepper flakes, paprika, cayenne, salt, pepper, and Worcestershire sauce. Stir until well mixed.
- Return the skillet to medium heat and pour in half of the cowboy butter mixture. Place the steaks back in the skillet and spoon the sizzling butter over them for 30–60 seconds.
- Serve steaks hot, drizzled with the remaining cowboy butter and garnished with fresh herbs.
