Ingredients

  • 1 unbaked 9-inch pie crust
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Whipped cream, for serving (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the unbaked pie crust into a 9-inch pie dish and crimp the edges.
  3. In a large bowl, whisk together eggs and sugar until pale and smooth.
  4. Whisk in cornstarch, cinnamon, nutmeg, and salt.
  5. Gradually whisk in milk and heavy cream until fully combined.
  6. Stir in vanilla extract.
  7. Carefully pour the custard filling into the prepared pie crust.
  8. Bake for 45–50 minutes, until the center is just set but still slightly jiggly.
  9. Remove from oven and cool completely on a wire rack.
  10. Chill for at least 2 hours before slicing. Serve with whipped cream if desired.

Notes

  • Do not overbake to avoid curdling the custard.
  • The pie will continue to set as it cools.
  • Freshly grated nutmeg adds extra holiday warmth.
