Ingredients
- 1 unbaked 9-inch pie crust
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 4 large eggs
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/8 teaspoon salt
- Whipped cream and ground cinnamon for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Place the pie crust into a 9-inch pie dish, trim and crimp the edges as desired. Chill for 10 minutes.
- In a medium saucepan, heat milk and heavy cream over medium heat until warm but not boiling.
- In a mixing bowl, whisk together eggs, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Gradually pour the warm milk mixture into the egg mixture while whisking constantly to temper the eggs.
- Pour the custard mixture into the prepared pie crust.
- Bake for 40–45 minutes, or until the edges are set and the center is slightly wobbly.
- Cool completely on a wire rack, then refrigerate for at least 2 hours before serving.
- Top with whipped cream and a sprinkle of cinnamon before serving, if desired.
Notes
- For a richer flavor, use half-and-half instead of milk.
- To prevent the crust from becoming soggy, brush it with a beaten egg before pouring in the custard.
