Description
Chocolate Pistachio Semifreddo is a rich and creamy Italian-style frozen dessert layered with dark chocolate and crunchy pistachios, offering a perfect balance of sweetness and texture.
Ingredients
- 1 cup heavy whipping cream
- 3 large eggs, separated
- 1/2 cup granulated sugar
- 4 oz (115 g) dark chocolate, melted and cooled
- 1/2 cup shelled pistachios, chopped
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Line a loaf pan with plastic wrap, leaving overhang on the sides.
- Whip the heavy cream to soft peaks and refrigerate.
- In a heatproof bowl, whisk egg yolks with half of the sugar. Place over a saucepan of simmering water and whisk until thick and pale. Remove from heat and let cool slightly.
- Stir melted chocolate and vanilla extract into the egg yolk mixture.
- In a separate bowl, beat egg whites with salt until soft peaks form, then gradually add remaining sugar and beat until stiff peaks.
- Gently fold the whipped cream into the chocolate mixture, then carefully fold in the egg whites.
- Fold in chopped pistachios.
- Pour mixture into the prepared loaf pan, smooth the top, cover, and freeze for at least 6 hours or overnight.
- To serve, unmold and slice with a warm knife.

- Let the semifreddo sit at room temperature for 5 minutes before slicing.
