Description

Chocolate Pistachio Semifreddo is a rich and creamy Italian-style frozen dessert layered with dark chocolate and crunchy pistachios, offering a perfect balance of sweetness and texture.


Ingredients

  • 1 cup heavy whipping cream
  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 4 oz (115 g) dark chocolate, melted and cooled
  • 1/2 cup shelled pistachios, chopped
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Line a loaf pan with plastic wrap, leaving overhang on the sides.
  2. Whip the heavy cream to soft peaks and refrigerate.
  3. In a heatproof bowl, whisk egg yolks with half of the sugar. Place over a saucepan of simmering water and whisk until thick and pale. Remove from heat and let cool slightly.
  4. Stir melted chocolate and vanilla extract into the egg yolk mixture.
  5. In a separate bowl, beat egg whites with salt until soft peaks form, then gradually add remaining sugar and beat until stiff peaks.
  6. Gently fold the whipped cream into the chocolate mixture, then carefully fold in the egg whites.
  7. Fold in chopped pistachios.
  8. Pour mixture into the prepared loaf pan, smooth the top, cover, and freeze for at least 6 hours or overnight.
  9. To serve, unmold and slice with a warm knife.
