Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 4 cups fresh spinach
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley, chopped (optional)
Instructions
- Season chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5โ6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sautรฉ garlic for 30 seconds until fragrant.
- Add chicken broth and simmer for 2 minutes, scraping up browned bits.
- Stir in heavy cream and bring to a gentle simmer.
- Add Parmesan cheese and nutmeg, stirring until smooth and thickened.
- Add spinach and cook until wilted.
- Return chicken to the skillet and spoon sauce over the top.
- Simmer for 3โ5 minutes, garnish with parsley, and serve.

- Pound chicken evenly for uniform cooking.
- Freshly grated Parmesan melts best.
- Serve with pasta, rice, or crusty bread.
