Ingredients

  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt

  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • 3 oz goat cheese, crumbled
  • 1 tbsp honey or maple syrup (optional)
  • 1 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cubed butternut squash with olive oil, salt, pepper, and thyme until evenly coated.
