Ingredients
- 2 large eggs
- 2 strips bacon
- 1 medium potato, diced
- 1/4 cup shredded cheddar cheese
- 1/4 avocado, sliced
- 2 tbsp salsa
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Heat a skillet over medium heat and cook the bacon until crispy. Remove and set aside.
- In the same skillet, add diced potatoes and cook in bacon drippings (or olive oil) until golden and tender. Season with salt and pepper.
- Push the potatoes to one side of the skillet. Crack in the eggs and cook to your preferred doneness (scrambled or fried).
- Assemble the bowl by layering potatoes at the bottom, then topping with eggs, crumbled bacon, shredded cheese, avocado slices, and salsa.
- Garnish with fresh herbs and serve warm.
