Ingredients

  • 2 large eggs
  • 2 strips bacon
  • 1 medium potato, diced
  • 1/4 cup shredded cheddar cheese
  • 1/4 avocado, sliced
  • 2 tbsp salsa
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)


Instructions

  1. Heat a skillet over medium heat and cook the bacon until crispy. Remove and set aside.
  2. In the same skillet, add diced potatoes and cook in bacon drippings (or olive oil) until golden and tender. Season with salt and pepper.
  3. Push the potatoes to one side of the skillet. Crack in the eggs and cook to your preferred doneness (scrambled or fried).
  4. Assemble the bowl by layering potatoes at the bottom, then topping with eggs, crumbled bacon, shredded cheese, avocado slices, and salsa.
  5. Garnish with fresh herbs and serve warm.
