Ingredients

  • 2 lbs salmon fillet, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/3 cup fresh parsley, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon slices, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillet on the prepared baking sheet, skin-side down.
  3. In a small bowl, mix olive oil, Dijon mustard, garlic, lemon zest, lemon juice, salt, and black pepper.
  4. Spread the mixture evenly over the salmon.
  5. In another bowl, combine parsley, dill, and thyme.
  6. Press the herb mixture gently onto the salmon to form a crust.
  7. Bake for 15–18 minutes, or until the salmon flakes easily with a fork.
  8. Remove from oven and let rest for 5 minutes.
  9. Garnish with lemon slices and serve warm.
