Description

Baked Cod in Coconut Lemon Cream Sauce is a light yet creamy seafood dish featuring tender cod fillets baked in a fragrant coconut milk sauce with fresh lemon, garlic, and herbs.


Ingredients

  • 4 cod fillets (about 150 g each)
  • 1 cup full-fat coconut milk
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 190°C (375°F).
  2. Season cod fillets on both sides with salt and black pepper.
  3. In a skillet over medium heat, heat olive oil and sauté onion until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in coconut milk, lemon zest, lemon juice, paprika, and thyme.
  6. If a thicker sauce is desired, whisk cornstarch with 1 tablespoon water and add to the sauce.
  7. Simmer for 3–4 minutes, then remove from heat.
  8. Place cod fillets in a baking dish and pour the coconut lemon sauce over them.
  9. Bake uncovered for 18–22 minutes until the fish flakes easily with a fork.
  10. Garnish with fresh parsley and serve warm.

Notes

  • Serve with steamed rice, quinoa, or roasted vegetables.
  • Do not overbake to keep the cod moist and tender.
  • Lime juice can be substituted for lemon for a different flavor.
