Description
Baked Cod in Coconut Lemon Cream Sauce is a light yet creamy seafood dish featuring tender cod fillets baked in a fragrant coconut milk sauce with fresh lemon, garlic, and herbs.
Ingredients
- 4 cod fillets (about 150 g each)
- 1 cup full-fat coconut milk
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 190°C (375°F).
- Season cod fillets on both sides with salt and black pepper.
- In a skillet over medium heat, heat olive oil and sauté onion until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in coconut milk, lemon zest, lemon juice, paprika, and thyme.
- If a thicker sauce is desired, whisk cornstarch with 1 tablespoon water and add to the sauce.
- Simmer for 3–4 minutes, then remove from heat.
- Place cod fillets in a baking dish and pour the coconut lemon sauce over them.
- Bake uncovered for 18–22 minutes until the fish flakes easily with a fork.
- Garnish with fresh parsley and serve warm.
Notes
- Serve with steamed rice, quinoa, or roasted vegetables.
- Do not overbake to keep the cod moist and tender.
- Lime juice can be substituted for lemon for a different flavor.
