Ingredients
- 4 boneless, skinless chicken breasts
- 1 small apple (such as Honeycrisp or Gala), thinly sliced
- 4 oz brie cheese, sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme or rosemary
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp apple cider vinegar (optional)
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Carefully slice a pocket into each chicken breast horizontally, being sure not to cut all the way through.
- Season the chicken inside and out with salt, pepper, and thyme.
- Stuff each chicken breast with a few apple slices and brie cheese. Secure with toothpicks if needed.
- In a large oven-safe skillet, heat olive oil and butter over medium-high heat. Sear the chicken for 3–4 minutes on each side, until golden brown.
- In a small bowl, mix Dijon mustard, honey, and apple cider vinegar. Brush this mixture over the chicken breasts.
- Transfer the skillet to the oven and bake for 15–18 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C).
- Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
