This Apple and Brie Stuffed Chicken is an elegant yet easy-to-make dish featuring juicy chicken breasts filled with creamy brie, crisp apple slices, and a touch of fresh herbs. It’s the perfect balance of savory and sweet — ideal for weeknight dinners or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 small apple (such as Honeycrisp or Gala), thinly sliced
  • 4 oz brie cheese, sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or rosemary
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar (optional)
  • Fresh parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Carefully slice a pocket into each chicken breast horizontally, being sure not to cut all the way through.
  3. Season the chicken inside and out with salt, pepper, and thyme.
  4. Stuff each chicken breast with a few apple slices and brie cheese. Secure with toothpicks if needed.
  5. In a large oven-safe skillet, heat olive oil and butter over medium-high heat. Sear the chicken for 3–4 minutes on each side, until golden brown.
  6. In a small bowl, mix Dijon mustard, honey, and apple cider vinegar. Brush this mixture over the chicken breasts.
  7. Transfer the skillet to the oven and bake for 15–18 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C).
  8. Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley before serving.

  • Use a sharp knife to create a deep pocket without cutting through the chicken completely.
  • Granny Smith apples can be used for a tart flavor contrast.
